Diane Powers’ Casa de Bandini Mexican Restaurant in The Forum Carlsbad is bringing the heat with its new 2023 Seasonal Menu. It highlights bold flavors from fresh produce such as nopalitos, serrano peppers and mangoes to showcase the flavors of Mexico in these dishes.

Spicy Salmon Tacos
Intended to wake up customers’ palates, the Spicy Salmon Tacos include grilled salmon seasoned to perfection in two fresh lettuce wraps topped with jicama slaw, shredded cabbage and habanero mango salsa. ($19.95)

Nopalitos con Puerco
This dish brings the terrain of Baja to your plate. It features strips of nopalitos (prickly pear cactus) sautéed with tender seasoned pork and simmered in New Mexico chile salsa to create a savory, flavor-filled dish. ($18.95) 

Spicy Chile Campana
Anything but bland, the Spicy Chile Campana is two sweet red bell peppers, one filled with sauteed shrimp, serrano chiles and salsa verde and the other with grilled chicken, chiles and diabla salsa. Both are topped with jack cheese then baked until golden brown and gooey. ($19.95)

Ultimate Green Burrito
Tender and perfectly seasoned pork, sauteed with onions, serrano chiles and sweet peppers in salsa verde, is folded into a handmade flour tortilla with jack cheese to create the Ultimate Green Burrito. ($18.95)

Mango Ceviche de Pescado
A mix of savory and sweet, the Mango Ceviche de Pescado is a refreshing beginning to any meal. Deep sea cod is marinated with onion, serrano chiles and fresh citrus then tossed with avocado, mango, tomatoes and cilantro. ($16.95)
